Something exotic, maybe?



I was in a mood for something Indian, so I semi-invented this fruit chutney with shrimps. It is not your standard mango chutney, but rather my own variation. Very quick and easy to make, hot and spicy, the perfect dish for the hard day's night.

You will need:

1 yellow mango (don't take pretty green ones, take the not so good looking, but sweet and creamy yellow)
1 sweet pear
a couple of slices of papaya
1/2 of a big white onion
1/2 cup of orange juice
2 clows of garlic
1 spoon of vegetable oil you usually use
ground cayenne pepper
ground chili pepper
dash of salt and sugar

Put the rice to cook and start with the chutney. Dice and saute the onion in a small pot. Then peel and dise all fruits and add to the onion, sautee a couple of minutes and pour in the juice. Let it steam for 10-15 min on the low heat, add spices and crushed garlic. Then quickly sear the shrimps and add them to the chutney. Let it cook for couple of minutes. Salt and sweeten if you wish. Is you rice ready? Then put everything together and serve HOT!
